Le barriques

Winemaking

From the vine
to the cellar

The winemaking follows the same philosophy as the vineyards: to intervene as little as possible, to let the territory speak. The grapes, harvested by hand, ferment in respect of the fruit’s own rhythm. No forcing — only the patience of those who know how to wait.

The Barrel Room

The slow rhythm
of maturation.

First-fill French oak barriques cradle the wine through its ageing. A gentle and unhurried approach at every stage of the production process.

Spazio Tempo

Lo Spazio Tempo

The historic archive
of San Giovenale

The winery is designed to embrace time. Each vintage finds its place within these walls. Here time does not pass — it takes shape.
